18/01/08 – Brayden Kozak, Wishbone Restaurant – January 8, 2018

Brayden Kozak

Chef – Wishbone Restaurant

With 20 years in the industry, Brayden has spent the majority of his time working in small independent restaurants, like Three Boars and Wishbone.
After starting in a small road side diner in his hometown, Wainwright Alberta, he decided to pursue cooking courses at NAIT. After NAIT and a few years in Edmonton, he continued his training in Vancouver at the popular BIN 942, where he spent a year and a half cooking what is now the foundation style for all of his restaurants.
Brayden’s first taste at running the kitchen and menu development was at the Monsoon East/West Brasserie in Vancouver.
After Vancouver he spent some time in Tofino and Victoria and then decided to return to Edmonton to accept an offer to take the helm at Sugarbowl, where he spent 3 years.
During this time he met his future business partner, Brian. In 2012 they opened Three Boars, and shortly thereafter the popular Farrow Sandwiches. In 2017 they launched both Wishbone and a second Farrow
location.
