Executive Chef- Italia – at River Cree Resort 

Since his last evening with the Edmonton Gentlemen’s Dinner Club, Chris has left his position with the Petroleum Club to spend some time freelancing as a Chef and Restaurant Consultant.  Just recently he joined River Cree Resort as Executive Chef in Italia restaurant.

His long career on the Edmonton food scene started at Café Select. From there Chris has been involved with a number of Edmonton’s fine dining restaurants, including, the Red Ox Inn, Vi’s on the River, Le Petite Marche, Nina’s, Murrieta’s, Sorrentino’s Restaurant Group (for more than 10 years) and Buco Pizzeria and Vino.

“How many bowls do you guys need to make 1 dish?” resonate with many of the members and guests. I also believe that if you have to make it up as you go or improvise then just go for it. The show must go on.”

 

“ I credit both my Mom and my Grandmother for becoming a Chef. Mom looked on my cooking abilities as welcome help around the house and Grandma insisted that I would one day be a chef. I was entirely unconvinced and considered studying to become a lawyer. After a year off from University and a working trip to Europe I was hooked.”

Second Course
Roasted Bone Marrow with Spinach and Ricotta Gnocchetti, Pan Grattato and Aged Balsamic

Third Course
Porchetta Toscana- Pork Loin wrapped in a pork belly, Scored and Seasoned with Fennel, Coriander, Citrus, Garlic, Rosemary, Parsley, and Sea Salt
Served with Roasted Potatoes and Salsa Verde
Suggested wine: Sangiovese- something from Montalcino or the Bolgheri

Fourth Course
Torta Nera
Bitter Dark Chocolate Tart with Walnuts and Dried Stone Fruit. Chantilly Cream
Suggested wine- Vin Santo or Recioto
