Hora d’oeuvres – A trio of small bites –  Monmarthe Secret de Famille Premier Cru Brut Champagne

A creamy shell fish and prawn broth served with basil oil and garnished with locally grown edible flowers served in an expresso cup.

Petite Pacific crab and Saltspring Island chevre served on a house prepared pastry spoon with wild salmon roe

Avocado quail egg mimosa

Appetizer – Seafood Ceviche –   O’Rourke Peak Cellar 2021 Reisling

A refreshing combination of Prawns and Scallops marinated in citrus juices accompanied with Avocado Aioli.

First Course – Soup –

British Columbian west coast wild forged mushroom and agassiz hazelnut soup.

Second Course – Duo of Coho Salmon – Birgit Braunstein Pinot Blanc

 

Wild Northwest salmon leek roulade and salmon cake on a bed of sauteed zucchini with a blackberry butter sauce.

Third Course – Brewer-Clifton Machado 2017 Pinot Noir

 

Seared Duck Breast with Blueberry port sauce, farro with wild mushrooms and carrot puree.

Fourth Course – Dessert – 2019 Alcyone Single Vineyard Tannat, Uruguary

Blackberry Chocolate cake with blackberry coulis, blackberry cinnamon ice cream and roasted hazelnuts.
