A graduate of The Culinary Institute of America (CIA) in New York, Chef Sonny is originally from Toronto, Canada. Early in his career, he traveled and worked extensively in French and Italian kitchens, developing a strong foundation in classical techniques and European cuisine.

Upon returning to Canada, Chef Sonny joined Restaurant Claude, where his dedication and culinary excellence led to a partnership. Over more than 10 years, he played a key role in building the restaurant into one of Canada’s respected dining establishments.After closing Restaurant Claude, Chef Sonny joined the Sorrentino Restaurant Group, beginning as Executive Chef at Sorrentino Downtown.

Chef Sonny later became a partner at Bistecca, where he successfully operated the restaurant for 12 years. Due to the impact of the COVID-19 pandemic, the restaurant was forced to close.

Following the pandemic, Chef Sonny transitioned into culinary education, teaching at NAIT Culinary School for five years, while also establishing a VIP catering business specializing in high-end private and corporate events.

Chef Sonny is currently serving as Executive Chef at La Ronde, Château Lacombe Hotel, a role he has held for the past three years, where he continues to lead with passion, discipline, and a commitment to culinary excellence.
